My ev charger often drops to offline mode. Any reasons why this might be doing this regularly?
It’s a pain as there’s nothing I can do to get it back.
Any thoughts/advice would be great.

Grid overvoltage (>253V) will do this. It was what my Ohme Pro was doing. Can your EV charger supplier/support to see if their logs have any over voltage situations (your charger will be sending data to them)? Are there any on your inverter logs?
If you have an over voltage situation, you should report it to the DNO (via their emergency fault line).
EV chargers have built in protection to go offline if grid voltage exceeds limits. An internet search will find lots of info.
