Unlikely you can support your daily house load on a single overnight charge, and as you say, solar figures will be much lower in winter.
So you want a tariff with a lower overnight rate but not the penalties of a too high daytime rate.
I therefore wouldn’t recommend Economy 7:

Agile and tracker are cheaper as long as the energy market rates stay similar (which they are predicting to do), but need active management for charging and discharging and there is some risk.
Flux or intelligent flux is cheaper than standard variable assuming that your battery can see you through the 4-7pm peak.
