I'm using Sonoff TH Elite (https://sonoff.tech/product/diy-smart-switch/th-elite/) for this exact purpose.
It's only got one pickup but i've got in the tank middle side port as the thermocouples for the S-plan controller.
The unit has a nice LCD screen on the front too.
I dont use it to control anything directly, but use it to report temps to Home Assistant.
I have my immersion heater automated using a heavy duty zigbee controlled relay, set to turn on when i'm exporting an large excess.
If i had see the pickups for the Shelly, i would have gone that way instead for data security...
I am also anxious about having the Sonoff switch a 3KW load on and off although technically it's rated for higher...
